I discovered Philly Tomato Pie on one my many business trips to Philadelphia when I was a project manager in construction. Sold primarily in bakeries, the story goes that in the early 1900's Italian immigrant bakers would often have left over bread dough at the end of the day so they would press the thick dough into a baking sheets and top with a simple heavy tomato sauce and bake it. After baking it they would top it only with grated Parmigiano-Reggiano and Pecorino Romano cheeses. This would end up being the meal for their family that night. Sold and served at room temperature.
